When I was in college, I found this recipe in the newspaper. I wish I still had the recipe that I cut out so I could thank the person who has given my family our all-time favorite muffin recipe. Over the years it has gotten ripped up, but I did manage to rewrite it on an index card. I remember making them for Jeff when we were first started dating. This could have been one of the reasons he continued asking me out. 😉
It does not matter what time of the year it is, Fall, Winter, Spring or Summer, these muffins will always make a big impression.
Raw-Apple Muffins
First Bowl:
4 cups finely diced apples (peeled or unpeeled)
1 cup sugar
Mix these two ingredients together and set aside.
Second Bowl:
2 eggs
½ cup vegetable oil
2 tsp vanilla
In a separate bowl, blend well.
Third Bowl:
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
In a third bowl, mix these four ingredients.
Stir the egg mixture into the apples and sugar mix. Sprinkle the flour mixture over the apple mixture blend.
Optional:
1 cup raisins
1 cup walnuts, broken into little pieces.
Add the raisins and walnuts. Then spoon into muffin tins.
Bake at 325-degree oven for 25 minutes.
